Swiss Steak

Swiss steak is one of the best meals you will ever taste. It is fairly easy but also impressive to guests.

Ingredients

1/2 cup all-purpose flour

1 tablespoon dry mustard

2 pounds round beef steak,

cut 1-inch thick into palm sized pieces

2 tablespoons cooking oil

1 (15-ounce) can diced tomatoes

1 cup diced onions

1 cup diced green peppers

1/2 cup diced celery

4 tablespoons Worcestershire sauce

1 tablespoon brown sugar, firmly packed

1/2 teaspoon pepper

Tenderize steak by pounding with a meat tenderizing hammer.

Mix flour with mustard. Sprinkle flour mixture over steak and pound it again with meat hammer.

Heat oil in a large, heavy frying pan over medium to high heat. add steak and cook, turning once, until browned on both sides. Transfer it to a shallow baking pan.

Mix tomatoes and their liquid, onions, celery, Worcestershire, pepper and sugar in a bowl stir thouroghly.

Pour over browned meat soon to be Swiss steak.

Cover and bake at 350 degrees until meat is tender when pierced, at least 2 hours. If in doubt cook longer.

Makes 4 servings.
