Mussels w/shallot butter

Ingredients:

Mussels w/shallot butter

8 cups chicken or vegetable broth

3 lb fresh mussels, scrubbed and debearded

1 cup butter

1/2 cup finely chopped shallots

1/4 ccup lemon juice

1 tbsp grated lemon zest

2 tbsp chopped fresh parsley

Directions

Prep time: 15 min

Cook time: 15 min

Serves 4-8

1. Heat broth in a large dutch oven over med-high heat bring to a boil. Add mussels to broth, cover and cook 4-6min. stirring coccasionally until mussels open..(discard any that do not open) Drain and keep warm.

2. Melt butyter in a medium skillet. Saute' shallots 5 min. or until tender. add lemon juice and lemon zest and heat through. Pour over mussels and sprinkle w/parsely. Serve as appetizer or side dish
