Lazy Roast Chicken

4 pound whole chicken (usually called a broiler)

2 tablespoons cooking oil

2 tablespoons CHEF SALT

Rinse chicken with cold water; shake excess water off of it. Rub cooking oil over entire chicken including inside cavity. Generously shake CHEF SALT over outside and inside cavity of chicken.

Roast chicken on baking pan, breast-side-up. Use a rack under it if you have one it will keep the bottom of the bird from being soggy. If you don't have a rack another very good method is to cut the chicken in half and roast skin side up. Roast in oven 400ºF  for one hour or until meat is no longer pink and juices run clear. Best place to check this is between the thigh and the body of the chicken ( if using Meat Thermometer 175º- 180ºF at thickest joint) Let stand 10 minutes before carving.
