Chicken Tarragon with vegetables
Prepare marinadeMix vinegar, oilsoy sauce,garlic and tarragon Using a plastic bag or a tupperware style sealed container place chicken and all but four ounces of the marinade Refrigerate for ten hours turning container over before going to bed Preheat oven to 375 degrees Drain chicken Throw away marinade Place chicken in shallow baking pan Toss vegetables with the four ounces of marinade set aside Place in covered baking dish bake chicken and vegetables for twenty-five minutes Uncover vegetables Continue to cook chicken and vegetables until done ( about thirty minutes) vegetables should be tender to a fork and chicken should have juices that run clear when punctured Serve and Enjoy!
