Chicken Tarragon with vegetables

Ingredients

Time approximately 75 minutes after over night marinate

Half cup white Vinegar

Half cup cooking oil

One ounce soy sauce

One clove garlic

Two teaspoons fresh chopped tarragon

Two boneless chicken breasts

Three carrots cut into one inch pieces

One zucchini sliced

One large onion cut into one inch pieces

Prepare marinade

Mix vinegar, oilsoy sauce,garlic and tarragon

Using a plastic bag or a tupperware style sealed container place chicken and all but four ounces of the marinade

Refrigerate for ten hours turning container over before going to bed

Preheat oven to 375 degrees

Drain chicken

Throw away marinade

Place chicken in shallow baking pan

Toss vegetables with the four ounces of marinade set aside

Place in covered baking dish

bake chicken and vegetables for twenty-five minutes

Uncover vegetables

Continue to cook chicken and vegetables until done ( about thirty minutes) vegetables should be tender to a fork and chicken should have juices that run clear when punctured
