Beef Kabobs

Ingredients

1 1/2 pound boneless beef sirloin steak, cut 1-inch thick

2 tablespoons vegetable oil

1 tablespoon each fresh lemon juice

2 teaspoons brown mustard

1 teaspoon honey

1/2 teaspoon dried oregano

1/2  teaspoon ground black pepper

1 medium green or red pepper, cut into 1-inch pieces

1 onion quartered and separated into slices

Four skewers one foot (if using wood soak them for twenty minutes)

Cut beef steak into 1-inch pieces. Mix together oil, lemon juice, mustard, honey, oregano and pepper in bowl; add beef, peppers and onions, stirring to coat. Alternately thread pieces of beef, pepper and onion slices on each of four skewers. Place kabobs on preheated grill so meat is 3 to 4 inches from heat. If grill is unadjustable you may need to turn up or down heat accordingly. Grill ten minutes for medium rare, turn occasionally. Season with chefs salt if desired. In winter you may broil in oven.

Makes 4 servings.
